A] PRODUCT DESCRIPTION:

Apple Juice concentrate shall be processed in accordance with Good Manufacturing Practices. The product shall conform in every respect to the provisions set forth under Food Safety Standard Authority of India. It shall produce from fresh, sound, ripened Apples that are sorted, clarified, aseptically processed and filled into sterilised bag.

B] PHYSICAL ATTRIBUTES:

a. Colour : Characteristic of Clarified Apple Juice concentrate, Light to medium Amber

b. Appearance : Typical for Apple juice concentrate. Good clarity

c. Flavour / Aroma : Typical of Apple juice concentrate, shall be free of objectionable flavour & odours

 

C] INGREDIENT DECLERATION:

Product is manufactured from fully ripped apples and does not contain any Preservative, colour & Flavour.

D] ANALYTICAL ATTRIBUTES:

a. Total Soluble Solids at 21oC (oBrix) : 70 – 71

b. Acidity (as % Malic acid at 70° Brix) : 1.0 – 3.6

c. pH,11.5° Brix : 3.2 – 4.4

d. Haze % Transmittance at 625nm,11.5° Brix : Min. 90

e. Turbidity NTU, 11.5° Brix : Less than 5

f. Pectin : Less than 2%

g. Starch : Negative

h. Patulin : Less than 50 ppb

 

E] MICROBIOLOGICAL ATTRIBUTES:

a. Yeast and Mould Count/ml : < 500

b. Standard Plate Count/ml : < 2000

c. Coliform/ml : Absent

 

F] PACKAGING SPECIFICATIONS:

Available in 270 Kg aseptic bag in open top MS drum

G) STORAGE:

a. Stored in cool and dry place away from heat.

b. Storage Temperature Requirements: Less than 10°C

H) SHELF LIFE:

18 Month from date of manufacturing when stored at stated temperature. May darken over time. Product should be used quickly after opening the bag.
